Healthy recipe - Lamb Cutlets with Pea Mash & Mint Sauce


Here's to another year of good health & fitness! Let's kick off another year of fitness success. I was really afraid that after Christmas and NYE I would lose all motivation but luckily thanks to myfitnesspal iPhone app and the support of my friends/family/husband I'm still disciplined. So far I've lost 11.2KG's, so pleased with myself and my achievements. I also can't believe I went to the movies the other day without eating popcorn!!!! Sigh. I love buttery, super fatty popcorn but I had to be strong! Actually it was Wayne (my husband) that was holding me back from buying any hahaha, oh man you don't know how big my love is for popcorn.

Since about November I've been buying the Healthy Food Guide Magazine which I have found really helpful for dinner ideas. I also love the nutritional stats they put on each recipe, it goes hand in hand with myfitnesspal calorie counting.

A few days ago my husband was staying late at work which brings the dilemma of having to cook for myself, so I had to find a very quick recipe to avoid feelings of lazyness and opting out for take out.
The healthy food guide magazine had this easy recipe of Lamb Cutlets with Pea Mash and Mint Sauce. So delicious and so easy!

Lamb Cutlets with Pea Mash & Mint Sauce
Serves 4

(Gluten free, Dairy-free and Diabetes-friendly)

1 cup mint leaves
1 tablespoon caster sugar
1/4 cup red wine vinegar
12 small small French-cut lamb cutlets (45g each)
800g frozen green peas

1. To make mint sauce, place mint into a food processor and process until finely chopped. Place mint and sugar into a heatproof bowl. Warm vinegar in a small saucepan over low heat, then pour over mint mixture and stir until sugar dissolves. Season with ground black pepper. Set aside.

2. Steam peas until tender-crisp. Drain well, return to saucepan and roughly mash. Season with ground black pepper.

3. Spray a large frying pan with oil and place over high heat. Cook cutlets for 2-3 minutes each side for medium, or until cooked to your liking. Drizzle with mint sauce over cutlets and serve with mash.
